- 1 kg. of snails
- 1 garlic bulb
- 1 chilli pepper
- 1 ham bone
- 1 mature ham skine
- Rinse the snails with salt and vinegar (3 times).
- Bring the snails to the boil, then drain and drop them into a bowl and rinse again.
- Put them into a saucepot with water and add the ham bone, the ham skin, the mint, the garlic and the chilli pepper. Cook for about 45 minutes.
- Season them and ready to serve.
